Let’s Make Sweet Potato Black Bean Quesadillas!
Cooked Sweet Potato
1 can Black Beans (Drained and Rinsed)
Shredded Monterey Jack Cheese
-In a medium bowl, stir together sweet potato, black beans, garlic powder, onion powder, salt, and pepper.
-Heat and oil a pan or flat top skillet.
-Place down tortillas on the skillet, layer a hand full of cheese, sweet potato and bean mixture, cheese, and a tortilla on top.
-Once the bottom is brown and cheese is melted, flip the quesadilla and cook until that is browned and the cheese is melted.
-Serve with our homemade salsa and enjoy!
