Sweet Potato


Yellow Bell Pepper

Brussel Sprouts


Olive Oil

Black Pepper



-Preheat oven to 400 degrees. Place a large baking sheet in the preheating oven.

-Peel and chops ends off of the sweet potato and parsnip and cut into chunks.

-Cut the center out and remove seeds from the yellow bell pepper. Cut into 4 pieces and halve those.

-Cut the ends off of the onion. Cut in half and peel the outer skin off. Cut each onion half 3 times.

-Cut off the bottom of the brussel sprouts and cut each sprout in half.

-In a large bowl, combine all the veggies and drizzle with olive oil.

-Season with black pepper and salt. Stir.

-Pour olive oil onto the preheated baking sheet.

-Transfer the veggies to the oiled sheet pan.

-Bake until the veggies are soft and caramelized.
